The card game Granny Weatherwax had with Death to save the life of a child (I forget which book)...

Can't say exactly why...but that passage moves me no end...
The soul and centre of witchcraft in that passage right there...
And did you notice that Death let her cheat? ;)

Wyrd Sisters - Granny Weatherwax attending her first play
The Light Fantastic (I think) - the wizards summoning Death (I hope you know I was at a party...)
Pyramids - the "namby pamby saying his prayers" scene at the Assassins' School where the namby pamby is drawing a pentacle and sacrificing a goat
Moving Pictures - the reverse King Kong scene with the giant woman carrying the Librarian up the Tower of Art
Making Money - the clown scene near the end
Unseen Academicals - the orc analysing himself
Mort - Death in the conga line. Death's interview at the employment office
Hogfather - The scene in the department store of course! Has already been mentioned but fantastic...
Small Gods - The Ephebian philosophers in the tavern
Guards! Guards! - The scene with the doors in the rain and the secret passwords near the beginning
Going Postal - the scene ending with the letters saying "Deliver Us" (worst Pratchett pun ever perhaps?) ;). The pin collecting shop (nicely done in the TV version too)
Monstrous Regiment - everything to do with socks

Enough for now...

This line from "Guards! Guards!";

"You have the effrontery to be squeamish. But we were dragons. We were supposed to be cruel, cunning, heartless, and terrible. But this much I can tell you, you ape - we never burned and tortured and ripped one another apart and called it morality." - The Dragon

In Hogfather when Death of Rats give the Raven/crow a sheep. That died in its sleep. After a long happy life. And who would probably be happy to know its death had helped someone..

What I find amazing is that he can slip in really cutting, deeply pessimistic comments like this on the human condition and still leave us laughing and feeling upbeat about ourselves and life in general at the end of the book...

Nothing in the Watch books really sticks in my head, but I'd say the things I remember most are the Dread Portal introduction to "Guards! Guards!", the Cripple Mister Onion game from "Witches Abroad", the Death roll from "Jingo" and - for some reason - the wizard's death in "Reaper Man".
Well, I remember is death but not his name.

Windle Poons. Windle Poons. Windle Poons. It gets funnier every time I say it. Would it be really cruel if I named one of my as-yet-unborn children Windle? It could be Windy for short!

Vetinari's speech in Unseen Academicals, ending with my tag-line:

And that’s when I first learned about evil. It is built into the very nature of the universe. Every world spins in pain. If there is any kind of supreme being, I told myself, it is up to all of us to become his moral superior.”

I'm sure we've all felt like that at some time. I know I have.

Vimes being chased by the werewolves in The Fifth Elephant.
The frequently mentioned Cripple Mister Onion scene in Witches Abroad.
Lord Greebau chasing Walter Plinge aka 'The Ghost' in Maskerade.
Anyone being chased sticks in my memory, he does write some good chase scenes!

Death cooking in a tavern and feeding the cats in the backyard while letting time stand still, thus creating the first fast food restaurant.

Mort was my introduction to the disk novels, and this scene is burnt into my memory forever...

I like that scene too - it's sort of bittersweet that Death seems to have found a job that makes him happy, but has to go back to his Duty.
